Much is made about where oysters come from as it relates to the different flavors we experience when we eat them. We call this merroir. Oysters, like wines, are clearly a varietal product. There is tremendous variation in how they taste. This blog will follow our Noank Oysters through their growing year, how the change through the year, and how these changes affect the way they taste.
